Pasta and Greens
Ingredients:
- 1 cup dried multigrain penne
- 2 tsp olive oil
- 2 shallots (or green onions) finely chopped, about ½ cup
- 2 cloves garlic, minced
- 2 tbls dry white wine or water
- 6 cups chopped bok choy
- 1 cup chopped Brussels sprouts
- 1 tbls margarine
- 2 tsp dried Italian dried Italian seasoning
- ¼ tsp each salt & freshly ground black pepper
- 3 tbls grated Parmesan cheese
Directions:
- Cook pasta according to package directions, except -omit salt. Meanwhile, in a large skillet, heat oil over medium –high heat. Add shallots and garlic; cook for 3 to 4 minutes or until shallots are tender, stirring frequently.
- Add wine to skillet, cook until evaporated, scraping up any browned bits. Add Brussels sprouts; cook and stir 3 minutes. Add bok choy; cook and stir for 2 minutes.
- Add cooked pasta to mixture in skillet. Stir in margarine, Italian seasoning, salt and pepper. Transfer to a serving dish. Sprinkle with Parmesan cheese.
